Ingredients & Substitutions

Chicken:

I prefer boneless, skinless chicken breasts for this recipe. However, you could use chicken thighs if you prefer.

Cajun Seasoning:

If you don’t have any on hand, make your own Cajun seasoning. Homemade seasonings provide the best flavor! Use it on the chicken and in the mac and cheese.

Pasta:

Elbow macaroni is ideal for mac and cheese due to its shape and texture, which hold the cheese sauce well. You could also use other tubular pasta varieties for great results. For a homemade touch, consider making your own pasta!

Cheese:

Grating blocks of cheese is recommended for this recipe. I used sharp cheddar and mozzarella cheeses. Feel free to use your favorite cheese blends!

Tomatoes:

Dice a fresh tomato or use a can of diced tomatoes, drained. If you don’t like tomatoes, you can omit them.

How to Get Creamy Macaroni and Cheese

To achieve a perfect creamy texture, avoid reheating the pan to melt the cheese. Overheating can result in a grainy texture. The ingredients in the pan are already hot enough to melt the cheese naturally. After stirring in the cheese, pour the mixture over the cooked noodles and let the cheese melt as you mix. This method ensures a smooth and creamy mac and cheese.

Can I Make This Ahead of Time?

Yes, you can prepare the chicken in advance. Once cooked, slice the chicken and store it in an airtight container in the refrigerator for up to 3-4 days. Reheat the chicken when ready to top the macaroni and cheese.
