Homemade Chipotle-Style Chicken

Ingredients

  • 680 g (1 ½ pounds) boneless, skinless chicken thighs
  • 10 g (2 teaspoons) ground coriander
  • 10 g (2 teaspoons) cumin
  • 1 can (198 g) chipotle peppers in adobo sauce
  • 4 cloves garlic, minced
  • 10 g (2 teaspoons) kosher salt
  • 60 ml (4 tablespoons) olive oil

Instructions

  1. In a medium bowl, combine ground coriander, cumin, chipotle peppers in adobo, minced garlic, kosher salt, and olive oil.
  2. Place the chicken thighs in a zippered plastic bag and pour the chipotle mixture over them.
  3. Seal the bag, removing any excess air, and marinate in the refrigerator for 1 hour.
  4. Heat a large skillet over medium-high heat. Cook the chicken thighs for 3-5 minutes on each side, until slightly charred.
  5. Reduce heat to medium-low and continue cooking for 10-15 minutes, or until the internal temperature reaches 74°C (165°F).
  6. Dice the cooked chicken into bite-sized pieces.
  7. Serve with tortillas, rice, fresh pico de gallo, sour cream, cheese, and your favorite fixings. Enjoy!
