For an even spicier kick, finely chop the chipotle peppers before adding them to the marinade. Keep in mind that the longer the chicken marinates, the spicier it will become. You can marinate the chicken for up to 24 hours for maximum heat intensity.

Homemade Chipotle-Style Chicken


  • 680 g (1 ½ pounds) boneless, skinless chicken thighs
  • 10 g (2 teaspoons) ground coriander
  • 10 g (2 teaspoons) cumin
  • 1 can (198 g) chipotle peppers in adobo sauce
  • 4 cloves garlic, minced
  • 10 g (2 teaspoons) kosher salt
  • 60 ml (4 tablespoons) olive oil


  1. In a medium bowl, combine ground coriander, cumin, chipotle peppers in adobo, minced garlic, kosher salt, and olive oil.
  2. Place the chicken thighs in a zippered plastic bag and pour the chipotle mixture over them.
  3. Seal the bag, removing any excess air, and marinate in the refrigerator for 1 hour.
  4. Heat a large skillet over medium-high heat. Cook the chicken thighs for 3-5 minutes on each side, until slightly charred.
  5. Reduce heat to medium-low and continue cooking for 10-15 minutes, or until the internal temperature reaches 74°C (165°F).
  6. Dice the cooked chicken into bite-sized pieces.
  7. Serve with tortillas, rice, fresh pico de gallo, sour cream, cheese, and your favorite fixings. Enjoy!
