Crispy Air Fryer Pickle Egg Rolls with Sriracha Ranch

These egg rolls are perfect for your Super Bowl Party or any gathering with friends and family. They are easy to assemble and achieve a delightful crunch in the air fryer. Pair them with your favorite beer or beverage. While tasty on their own, the homemade sriracha ranch sauce elevates them even further. When life gives you pickles, you make this amazing appetizer! Don’t worry if you don’t have an air fryer; I’ll provide oven and frying instructions too.

Ingredients for Pickle Egg Rolls

  • Pickles: Use large dill pickles and cut them into spears. You can also buy pre-cut dill pickle spears for convenience.
  • Egg Roll Wrappers: Available in the refrigerated section of most grocery stores. Avoid using wonton wrappers as they are not suitable.
  • Cheese: Havarti cheese complements the pickles well. Other cheeses were not tested, so sticking with Havarti is recommended.
  • Dipping Sauce: A creamy mayonnaise-based sauce made with milk, dry ranch seasoning mix, and sriracha sauce.

Making Air Fryer Pickle Egg Rolls

This appetizer is great for any occasion. Start by cutting two large dill pickles into spears, making eight spears in total. Pat them dry with a paper towel. Arrange the egg roll wrappers and place a slice of Havarti cheese and a pickle spear on each. Wet the edges of the wrappers with pickle juice or water and follow these folding steps:

  1. Fold the bottom corner up and over the pickle, rolling once.
  2. Fold in the right and left corners towards the center, lightly pressing to seal. Add more pickle juice or water if needed.
  3. Continue rolling until the pickle is fully wrapped, pressing to seal the edges.

Place the rolled egg rolls in the air fryer basket. The number of batches depends on your air fryer size. Spray the tops with nonstick cooking spray and air fry at 400°F (200°C) for 3-4 minutes. Flip, spray again, and air fry for another 3-4 minutes. Serve with the sriracha ranch dipping sauce.

Preparing the Dipping Sauce

The sauce adds an extra layer of flavor. Even if you’re not a mayonnaise fan, you’ll likely enjoy this sauce. To make it, whisk together mayonnaise, milk, dry ranch seasoning mix, and sriracha sauce. For more heat, double the sriracha amount.

Oven Instructions

If you don’t have an air fryer, preheat your oven to 400°F (200°C). Follow the same assembly instructions. Place the egg rolls on a baking sheet lined with parchment paper. Bake for 8-10 minutes, flip, and bake for another 8-10 minutes. You can spray the egg rolls with cooking spray to achieve a crispier texture.

Frying Instructions

For extra crispy egg rolls, you can deep-fry them. Heat about an inch (2.5 cm) of oil in a large skillet over medium heat until it reaches 350°F (175°C). Fry the egg rolls for 1-2 minutes per side. Drain on paper towels to remove excess oil. If you have leftover oil, check out how to clarify used cooking oil so it doesn’t go to waste!

Ingredients

Pickle Egg Rolls

  • 2 large whole dill pickles, quartered into spears (for a total of 8 spears)
  • 8 egg roll wrappers
  • 8 slices Havarti cheese
  • Pickle juice, or water for wetting the edges of the egg rolls

Sriracha Ranch Dipping Sauce

Instructions

  1. Set the pickle spears on a paper towel and blot dry.
  2. On a clean work surface, set out 8 egg roll wrappers.
  3. Top each with a slice of Havarti cheese and a pickle spear.
  4. Use the dill pickle juice or water to wet the edges of the egg roll and then tightly roll the egg roll wrapper around the pickle.
  5. To roll, first, fold up the bottom corner to just over the pickle and roll once, to fold in the pickle.
  6. Second, fold in the right and left corners of the wrapper to the center, lightly pressing to seal. (You may need to add more pickle juice to the edges and corners to help the wrapper stay folded.) It should now look like an open envelope.
  7. Continue rolling until the pickle is fully wrapped inside of the egg roll. Press to seal the edges.
  8. Set the air fryer to 400°F (200°C).
  9. Place the egg rolls into the basket of your air fryer. (Depending on the size of your air fryer, you may have to work in batches.) Spray the tops of the egg rolls with nonstick cooking spray and air fry the egg rolls for 3-4 minutes. Flip them over, spray again with cooking spray, and air fry for another 3-4 minutes. Serve with sriracha ranch dipping sauce.

Sriracha Ranch Dipping Sauce

In a medium bowl, combine mayonnaise, milk, ranch seasoning mix, and sriracha sauce. Whisk together until combined.
Serve the pickle egg rolls with the sriracha ranch sauce.
