Creating these skewers involves two main steps: preparing the marinade and assembling the skewers.

  • ½ cup (118ml) barbecue sauce
  • ⅓ cup (79ml) soy sauce
  • ⅓ cup (113g) honey
  • 1 tablespoon sriracha
  • 2 teaspoons (10ml) sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper


  • 2 chicken breasts, cut into 1″ (2.5cm) pieces
  • 2 cups (350g) cubed pineapple
  • 1 red onion, quartered and layers separated
  • 3 bell peppers (red, orange, yellow), cubed

Assembling and Cooking

  1. For wooden skewers, soak them in water for an hour before use.
  2. Preheat your grill to medium heat (approximately 425°F [218°C]).
  3. Marinade: In a bowl, combine the barbecue sauce, soy sauce, honey, sriracha, sesame oil, garlic, ginger, salt, and pepper. Reserve ½ cup of this mixture for basting, then marinate the chicken in the rest for 30 minutes to 2 hours.
  4. Skewers: Thread the marinated chicken, pineapple, bell peppers, and onion onto the skewers.
  5. Grill the skewers, basting with the reserved marinade, for about 5-10 minutes on each side, or until the chicken is fully cooked.
