Juicy sweetish kohlrabi goes well with other vegetables and some fruits. Salads with this useful vegetable are light, low-calorie and many will like it. Salad according to the proposed recipe will be an excellent addition to the main meat dishes or side dishes, as well as successfully diversify the Lenten menu.
Ingredients (2 servings)
- Kohlrabi cabbage 250 г
- Fresh parsley to taste
- Green onion 1 bundle
- Olive oil to taste
- Carrots 1 pc.
- Ground black pepper to taste
- Cucumber 1 pc.
- Salt to taste
Instructions
Peel the kohlrabi from the top coarse, wash and dry.
Chop the kohlrabi into straws, salt a little and leave for 5 minutes.
Peel and grate carrots on a grater for Korean carrots or cut into thin slices.
Peel the cucumber and cut into julienne strips.
Chop the green onion and parsley finely.
Combine all chopped ingredients in a bowl, salt, pepper, pour olive oil and mix gently.
If the sourness is not enough, sprinkle the salad with lemon juice. Serve immediately.
