This side dish is so easy and tasty that it quickly became a staple in my weeknight meal rotation. Here’s how to make it:
Prepare the Sweet Potatoes: Start by washing, peeling, and cutting the sweet potatoes into approximately 1/2 inch (1.3 centimeters) cubes. You should end up with about 4 cups (680 grams) of cubed sweet potatoes.
Season the Potatoes: In a large bowl, combine the sweet potatoes, olive oil, kosher salt, black pepper, and garlic powder. Toss until the potatoes are evenly coated.
Bake the Potatoes: Spread the coated sweet potatoes in a single, even layer on a baking sheet lined with parchment paper. Bake at 450°F (232°C) for 30 minutes, flipping the potatoes halfway through to ensure even cooking.
Broil for Crispiness: After baking, broil the potatoes for an additional 3-5 minutes until they are crispy.
