  • Potatoes: Opt for baby red potatoes, leaving the skins on and quartering approximately 10 potatoes.
  • Kielbasa: Kielbasa, also known as ring sausage, lends its distinct flavor to this dish. You could also use Andouille sausage, Mexican Chorizo, or similar substitutes.
  • Veggies: Gather a yellow onion, red bell pepper, and minced garlic to enhance the dish’s flavor profile.
  • Chicken Stock: Utilize chicken stock for its rich flavor. Homemade chicken stock is preferred for the best taste.
  • Hot Sauce: A touch of hot sauce adds a subtle kick to the dish without overwhelming the other flavors.

Distinguishing Kielbasa from Sausage

Kielbasa, originating from Poland, differs from sausage in several aspects. While both come in various varieties, kielbasa is typically coarsely ground and shaped like a horseshoe or loop. It primarily consists of pork or a combination of pork and beef, imparting a unique texture. On the other hand, sausage incorporates a variety of meats. In the United States, kielbasa is also referred to as ring sausage and is readily available in most grocery stores.

Kielbasa and Potato Skillet Delight

Ingredients

  • 4 tablespoons (60 milliliters) olive oil, divided
  • 1 ½ pounds (680 grams) baby red potatoes, quartered (approximately 10 potatoes)
  • ½ teaspoon (2.5 grams) kosher salt
  • ¼ teaspoon (0.6 grams) pepper
  • 2 packages (13.5 ounces each) (764 grams total) kielbasa, or smoked sausage sliced into ½-inch rounds
  • 1 yellow onion, minced (approximately 1 cup)
  • 1 red bell pepper, cut into ¼-inch strips
  • 2 teaspoons (4 grams) Italian seasoning
  • ½ teaspoon (1.5 grams) garlic, minced
  • ½ teaspoon (1 gram) red pepper flakes
  • ¼ cup (60 milliliters) chicken stock
  • 1 teaspoon (5 milliliters) hot sauce
  • fresh parsley, for garnish
  • parmesan cheese, for garnish
  • salt and pepper, to taste

Instructions

  1. In a large skillet over medium heat, add 3 tablespoons of olive oil. Once hot, add the baby potatoes. Season with salt and pepper and cook for 28-30 minutes until fork-tender. Transfer cooked potatoes to a plate and set aside.
  2. To the same skillet, add the remaining tablespoon of olive oil. Brown the sliced kielbasa on each side, approximately 3-4 minutes per side.
  3. Add minced onion, bell pepper strips, Italian seasoning, minced garlic, and red pepper flakes to the skillet. Cook for an additional 3-4 minutes until the onions and peppers soften.
  4. Pour in chicken stock and hot sauce. Stir to combine.
  5. Return the cooked potatoes to the skillet and mix all ingredients until the potatoes are reheated.
  6. Serve immediately, garnished with fresh parsley and parmesan cheese. Adjust seasoning with salt and pepper if needed. Enjoy!
