Ingredients

Dipping Sauce

  • 1/2 cup (120 grams) mayonnaise
  • 3 tablespoons apple cider vinegar
  • 1/2 teaspoon Worcestershire sauce
  • 1/4 teaspoon horseradish sauce
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic salt
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper

Egg Rolls

  • 12 egg roll wrappers
  • 3 cups (approximately 700 grams) pulled pork, shredded, divided
  • 1/2 cup (140 grams) BBQ sauce, divided
  • 1 1/2 cups (400 grams) coleslaw, divided
  • 1 1/2 cups (200 grams) shredded Monterey Jack cheese, divided
  • Water, for sealing edges of wrappers

Instructions

Dipping Sauce

  1. In a medium bowl, combine all dipping sauce ingredients. Mix well and chill until ready to serve.

Egg Rolls

  1. On a clean work surface, lay out 12 egg roll wrappers.
  2. Place a heaping tablespoon of coleslaw, 1/4 cup of pulled pork, 2 teaspoons of BBQ sauce, and a tablespoon of shredded cheese onto each wrapper.
  3. Moisten the edges of the wrapper with water, then tightly roll the wrapper around the filling, folding in the sides as you go.
  4. Preheat the air fryer to 400°F (200°C).
  5. Arrange the egg rolls in a single layer in the air fryer basket, working in batches if necessary. Spray the tops of the egg rolls with nonstick cooking spray.
  6. Air fry the egg rolls for 2-3 minutes, then flip them over, spray with cooking spray again, and air fry for another 2-3 minutes, or until golden brown and crispy.
