Ingredients

Salad:

  • 1/2 cup (50 g) freshly grated Parmesan cheese
  • 4 medium zucchini, washed
  • 1 white squash, washed
  • 1 can (15 oz / 425 g) cannellini beans, drained and rinsed

Instructions

  4. Place 1 tablespoon (15 g) of Parmesan cheese on the prepared baking sheet, forming small piles. Lightly press each one down with the back of a spoon.
  5. Repeat with the remaining cheese, ensuring each pile is about 1 inch (2.5 cm) apart.
  6. Bake for 3-5 minutes until golden brown. Let cool while preparing the salad.
  7. Using a vegetable peeler, slice the zucchini and squash into long, thin ribbons and place them in a large bowl.
