  • 1 cup (2 sticks / 230 g) unsalted butter, room temperature
  • 1 cup (200 g) light brown sugar, packed
  • ½ cup (100 g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • ½ teaspoon kosher salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1½ cups (190 g) all-purpose flour
  • 2 cups (180 g) rolled oats
  • 1 cup (170 g) milk chocolate chips
  • 1 cup (170 g) semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a 9×13-inch (23×33 cm) baking pan by spraying it with baking spray, lining it with parchment paper, or using the butter and flour method.
  2. In the bowl of a stand mixer (or using a hand-held mixer), beat the unsalted butter, packed light brown sugar, and granulated sugar until well combined, about 3 minutes.
  3. Add the eggs one at a time, mixing well after each addition.
  4. With the mixer on low speed, mix in the vanilla extract.
  5. Remove the bowl from the mixer. Stir in the kosher salt, baking soda, baking powder, all-purpose flour, rolled oats, and semi-sweet chocolate chips by hand until all ingredients are well incorporated.
  6. Spread half of the mixture into the prepared baking pan.
  7. Sprinkle the milk chocolate chips evenly over the first layer.
  8. Carefully spread the remaining cookie mixture over the chocolate layer.
  9. Bake in the preheated oven until golden brown, about 30 to 40 minutes. The center should not jiggle much.
  10. Allow the bars to cool in the pan for about 5 minutes before cutting into squares.
