These Breakfast Tacos are topped with fresh ingredients over a scrambled egg and sausage base. You get the protein from the eggs and sausage along with the freshness from the veggies. While the toppings are versatile, here are the ones I used and loved.

Ingredients

  • Breakfast Sausage: I used my homemade breakfast patties recipe for the tacos, but store-bought breakfast sausage works fine too. Typically, they come in 16-ounce packages, but you only need 10 ounces (280 grams) for this recipe.
  • Soft-Shell Tortillas: I made 12 small tortillas (4 inches/10 cm), but you can opt for larger ones if you prefer. Just note that it will alter the serving size.
  • Buttermilk: You can make your own buttermilk if you want to try something homemade.
  • Jalapeno Peppers: Add these for a bit of spice, but feel free to skip if you prefer milder flavors.

How to Make Breakfast Tacos

Making Breakfast Tacos is quick and easy. To save time, chop the tomatoes, peppers, and onions the night before and store them in the refrigerator.

Cooking the Sausage

Crumble the sausage into a skillet and cook over medium-high heat until browned. The internal temperature should reach 160°F (71°C). Homemade breakfast sausage can elevate this dish. Once cooked, set the sausage aside, but keep the skillet on the heat for the tortillas. Wipe it down but don’t wash it.

Preparing the Eggs

Whisk the eggs with the buttermilk in a small bowl. Pour into a separate skillet over medium heat. Cook until almost firm. Don’t add salt or pepper during cooking; you can season them later if desired. Once the eggs are nearly firm, mix in the cooked sausage. Cook until the eggs are fully set, then remove from heat.

Assembling the Breakfast Tacos

Warm the tortillas in the same skillet used for the sausage, about 45 seconds per side. Flip them halfway through, and while the second side warms, sprinkle shredded cheese on top. Once the cheese melts slightly, layer the tortilla with the egg and sausage mixture, followed by your chosen toppings. Use a fork to ensure none of the delicious fillings go to waste!

Ingredients

  • 10 ounces (280 grams) homemade or store-bought breakfast sausage, crumbled
  • 12 small (4-inch/10 cm) tortillas
  • 8 large eggs
  • ¼ cup (60 ml) buttermilk
  • 1 cup (115 grams) Monterey Jack cheese, shredded
  • ½ cup (120 ml) salsa
  • 1 medium tomato, chopped
  • 1-2 medium jalapeno peppers, diced
  • 1 medium red onion, diced

Instructions

  1. Cook crumbled sausage in a large skillet over medium-high heat until evenly browned. Wipe down the skillet but don’t wash it. Set sausage aside and keep the skillet heated for the tortillas.
  2. In another skillet over medium heat, whisk together the eggs and buttermilk. Pour into the skillet and cook until almost firm.
  3. Add sausage crumbles to the eggs and cook until the eggs are firm.
  4. Using the sausage skillet, warm the tortillas for about 45 seconds per side. After flipping the first side, sprinkle shredded cheese on top.
  5. Once the cheese has melted, top the tortilla with the scrambled eggs and sausage mixture. Remove from heat and add desired toppings. Enjoy!
