  3. Gradually add the water, a little at a time, mixing with a fork until the dough comes together. You may not need to use all of the water, depending on the humidity of your environment. The dough should be smooth and slightly tacky.
  4. Turn the dough out onto a floured surface and knead it for a minute until it is smooth.
  5. Divide the dough into about 20 small balls and cover them with a damp towel. Let the dough rest for at least 30 minutes, or up to 2 hours. This step is important as it allows the gluten in the dough to relax, making it easier to roll out.
  6. After the dough has rested, heat a cast-iron skillet over medium-high heat.
  7. Sprinkle a little flour on your work surface and pick up one dough ball. Form it into a round disc with your hands.
  8. Using a rolling pin, roll out the dough from the center towards the edges, turning the disc slightly and repeating the process until you have a thin, 6-inch tortilla.
  9. Carefully transfer the tortilla to the heated skillet and cook for about 30 seconds, or until bubbles start to form on the surface and brown spots form on the bottom. Flip the tortilla and cook for another 20-30 seconds on the other side.
  10. Remove the cooked tortilla from the skillet and wrap it in a warm towel to keep it soft and pliable as you cook the remaining tortillas.
