Caesar salad is one of the most popular and frequently ordered salads in restaurants and cafes. I have not yet met a single menu that does not have Caesar salad with chicken, with turkey, with shrimp. The classic version includes chicken and breadcrumbs. I have to admit, this is my favorite salad, so I make it at home myself. All the ingredients are quite affordable and simple. But the main thing is the sauce, which plays an important role and affects the taste of the salad.
Ingredients (5 servings)
- Chicken breast 300 г
- Parmesan cheese 100 г
- Ground black pepper to taste
- Cooked egg yolk 2 units.
- 6 % vinegar 1 tsp.
- Olive oil 200 ml
- Mustard 2 tsp.
- White bread 200g
- Garlic 2 cloves
- Iceberg lettuce 1 bundle.
- Lemon juice 2 tbsp.
- Salt to taste
Instructions
Prepare all the necessary ingredients. We start by cooking the chicken fillet, since it will be cooked slowly, about 20 minutes, during which time we can prepare the dressing and the rest of the ingredients.
Cut the breast in large pieces, salt and pepper it.
Fry the breast in the oil until golden brown. Cover the first 5-7 minutes with a lid.
While the chicken is cooking, prepare the oil for the croutons. Mix 5 tablespoons of olive oil, squeeze 1 clove of garlic through a garlic masher, leave it for 10-15 minutes.
Cut 4-5 slices of bread into cubes.
Prepare the dressing. Mix the yolks with the mustard until smooth.
Squeeze out 1 clove of garlic and mix well.
Add 6% vinegar, lemon juice, salt, pepper and 3 tablespoons of olive oil.
Stir well.
Rinse and dry the lettuce leaves.
Meanwhile, the breast will be ready.
Cut the fried breast into small pieces and let it cool completely.
Pour the oil and garlic into the pan. (I do this through a metal sieve to keep garlic particles out of the pan.)
Lay out the sliced bread.
Fry in garlic oil. Let the croutons cool.
Grate the cheese on a medium grater.
Tear lettuce leaves with your hands.
Add the chicken, croutons and cheese.
Add the dressing and stir. A little of the dressing can be left on top for beauty. Serve at once.
