Ingredients for Passover Honey Cake

Main Cake:

  • 1/2 cup Crisco vegetable shortening (120 g)

  • 3/4 cup white sugar (150 g)

  • 3/4 cup golden yellow sugar (150 g)

  • 2/3 cup honey (160 ml)

  • 1 tsp vanilla extract (5 ml)

  • 1/2 cup applesauce (120 ml)

  • 3 tbsp baking powder (30 g)

  • 3 large eggs

  • 3 1/2 cups flour or matzo meal (440 g)

  • 2/3 cup milk (160 ml)

  • 1/3 cup honey (80 ml)

  • 1/2 cup chopped pecans, walnuts, or almonds (60 g)

Finishes:

  • Icing sugar (optional, to taste)

  • Shredded coconut (optional, to taste)

  • 1/3 cup honey (80 ml)


How to Make Passover Honey Cake

  1. Preheat the oven to 375°F (190°C). Generously grease a Bundt cake pan with cooking spray.

  2. In a large mixing bowl, cream together the Crisco, both sugars, and the honey. Stir in the vanilla extract and applesauce. Blend in the eggs, one at a time. Then add the baking powder and mix well.

  3. Gradually add the flour (or matzo meal) in 1-cup increments, alternating with the milk, until a smooth batter forms.

  4. Sprinkle your choice of nuts (pecans, walnuts, or almonds) in the bottom of the Bundt pan. Pour 1/3 cup of honey over the nuts to cover them.

  5. Gently pour the batter over the honey and nuts in the pan.

  6. Bake in the preheated oven for 40 to 45 minutes, or until a toothpick inserted into the cake comes out clean. Remove the cake from the oven and let it stand on a cooling rack for 10 minutes before inverting it onto a plate.

  7. Once the cake has cooled, place it in the refrigerator for 1 hour to chill.

  8. To finish the cake, remove it from the refrigerator. If you want to use icing sugar, simply sprinkle it over the top of the cake through a small sieve. If you prefer to use coconut, drizzle a little more honey over the top and sprinkle with shredded coconut.
