Exploring the Fluffernutter Legacy:

The Fluffernutter, a simple yet iconic sandwich comprising peanut butter and marshmallows, traces its roots back to World War I when it was originally dubbed the Liberty Sandwich by Emma Curtis. In the 1960s, the name was transformed to Fluffernutter for marketing purposes. Regardless of its title, the irresistible combination of peanut butter and marshmallows has captured the hearts of many—including mine!

Ingredients & Adaptations:

  • Peanut Butter: Opt for your preferred brand of creamy peanut butter for these bars. If you fancy a bit of crunch, crunchy peanut butter can be substituted.
  • Marshmallows: Grab a 16-ounce bag of mini marshmallows for convenience, or indulge in the homemade variety. You’ll need approximately 8 cups. If using regular-sized marshmallows, chop them into smaller pieces beforehand.
  • Cereal: Look for Rice Krispies or any crispy rice cereal variant.
  • Marshmallow Fluff: Enhance the gooey goodness by incorporating marshmallow fluff into the bars. If you’re out of store-bought fluff, consider whipping up a homemade batch.

Customizing the Pan Size:

While I prefer thick rice krispie bars, you can adjust the size of the pan to suit your preference. Use a 9×13-inch dish for thinner bars or an 8×8-inch dish for extra thickness.

Storage Tips:

Keep your Marshmallow Peanut Butter Bliss Bars in an airtight container at room temperature. Although they’re unlikely to last long, they can be stored for up to 5 days.

Marshmallow Peanut Butter Bliss Bars

  • 5 tablespoons unsalted butter
  • ¾ cup (193.5 g) creamy peanut butter, divided
  • 1 bag (16 ounces / 455 g) mini marshmallows (about 8 cups)
  • 6 cups (174 g) Rice Krispies Cereal
  • ½ cup marshmallow fluff

  1. Spray a 9×9-inch baking dish with nonstick cooking spray and set it aside.
  2. In a large pot over medium heat, melt butter and ¼ cup of peanut butter.
  3. Add marshmallows, stirring frequently until melted. Once melted, remove from heat.
  4. Spray a clean rubber spatula with nonstick spray to prevent sticking. Fold in the Rice Krispies cereal until well-coated.
  5. In a microwave-safe bowl, heat ¼ cup of peanut butter for 15-20 seconds until pourable and creamy.
  6. Gently fold the peanut butter and marshmallow fluff into the cereal mixture just until incorporated. Avoid overmixing.
  7. Transfer the mixture to the prepared baking dish, pressing it into an even layer.
  8. Heat the remaining peanut butter in the microwave for about 15-20 seconds. Drizzle it over the top of the bars.
  9. Allow the bars to cool to room temperature before cutting and serving. Enjoy the blissful indulgence!
