German Potato Roll with Mushrooms and Herbs

Ingredients:

  • potatoes, 6 pcs;
  • eggs, 3 pcs;
  • mushrooms, 400 gr;
  • flour, 3 tablespoons;
  • onion, 1 pc;
  • herbs to taste;
  • salt, pepper, spices;
  • Cottage cheese or other to taste, 200 g.

Instructions:

Take large potatoes. Grate potatoes on a coarse grater, salt, mix and leave for 5 minutes so that the mass will start to flow.
Squeeze the juice out of the potatoes.

Mix the potato mass with yolks and flour.

Whites should be well beaten with a mixer until a fluffy and thick mass and added to the potatoes, then stir.

Now add salt, pepper and any spices to your taste.

A baking tray is covered with parchment, grease it with vegetable oil and spread the potato mixture in an even layer.

Preheat the oven to 180 degrees and bake for about 40-45 minutes.

Slices of champignons and fry until the liquid evaporates in a dry pan.

Add onion, chopped cubes, a little vegetable oil and fry everything until tender.

Salt a little to taste.

Let cool potato layer, smear it with cottage cheese (you can just grate hard cheese on a coarse grater and sprinkle).

Put a uniform layer of mushrooms, sprinkle with chopped greens.

Roll up a tight roll and leave it to soak for about 1 hour.

Cut it into portions, put it on a plate, sprinkle it with finely minced garlic and herbs (as desired) and serve it.
