Ingredients for Margarita Cake

For the Cake:

  • 1 box white, yellow, or lemon cake mix (about 15.25 oz / 432 g)

  • 1 box instant vanilla pudding, 4-serving size (about 3.4 oz / 96 g)

  • 2/3 cup (160 ml) prepared margarita mix (non-alcohol version)

  • 1/2 cup (120 ml) canola or vegetable oil

  • 1/3 cup (65 g) sugar

  • 4 large eggs

  • Zest of 1 lime

For the Icing:

  • 1 1/2 cups (180 g) powdered sugar

  • 3–4 Tbsp (45–60 ml) prepared margarita mix (non-alcohol version)

How to Make Margarita Cake

  1. Preheat oven to 350°F (175°C).

  2. Lightly coat an angel food tube pan or bundt cake pan with non-stick cooking spray.

  3. In a large mixing bowl, combine all cake ingredients. Using an electric mixer, beat on low until dry ingredients are moistened. Increase speed to medium and mix for about 2 minutes, scraping the sides of the bowl as needed.

  4. Pour the batter evenly into the prepared pan.

  5. Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.

  6. Let the cake cool in the pan for 20 minutes, then remove and place on a wire rack to cool completely.

  7. While the cake cools, mix powdered sugar with 3 tablespoons (45 ml) of margarita mix, adding a little more if needed to reach a smooth glaze consistency.

  8. Using a wooden skewer or metal skewer, poke 20–30 holes into the top of the cooled cake.

  9. Pour the glaze slowly over the cake, allowing it to seep into the holes and drizzle down the sides.
