Velvety Chocolate Ermine Frosting


  • 1 cup (250 ml) whole milk
  • 5 tablespoons all-purpose flour (65 g)
  • 1 cup (2 sticks / 230 g) unsalted butter, room temperature
  • 1 cup (200 g) granulated sugar
  • ½ cup (60 g) Dutch-processed cocoa powder
  • 1 teaspoon vanilla extract (5 mL)


  1. In a medium saucepan over medium heat, whisk together milk and flour. Cook, whisking constantly, for 3-5 minutes until thickened, resembling a very thick pudding. Remove from heat and let it cool to room temperature. (The mixture will get lumpy again as it cools.)
  2. In the bowl of a stand mixer fitted with the paddle attachment, cream together butter, sugar, and cocoa powder on low speed until cocoa powder is incorporated. Increase speed to medium and mix until light and fluffy (2-3 minutes). Scrape down sides of the bowl as needed.
  3. Add cooled milk mixture to the bowl. Beat on medium-high speed until light and fluffy (2-3 minutes), pausing to scrape down sides of the bowl as needed.
  4. Switch to the whisk attachment. Add vanilla and mix on high for 8-10 minutes until frosting is smooth and creamy.
