If you’re tired of fried zucchini and pancakes, be sure to make a yummy zucchini pizza. Of course, it’s not a pizza in the literal sense, but it’s a very tasty budget-friendly quick dish that’s good for breakfast, dinner, snack time, or a get-together with friends. The zucchini base of this pizza is dense, not moist and very tender. In addition to cheese, you can use sausage, meat, mushrooms, any vegetables as toppings.
Ingredients (4 servings)
- Zucchini 300 g
- 1 egg
- Vegetable oil 1 tsp.
- Hard cheese 100 g
- Garlic 2 cloves.
- Ground black pepper to taste
- Salt to taste
- Flour 1.5 tbsp.
- Fresh herbs 1 bunch
Instructions
Grate zucchini on a coarse grater. From a young zucchini you can not peel the skin.
Squeeze the zucchini mass from the liquid so that the juice runs out, and transfer it to a bowl.
Grate half of the cheese on a coarse grater, half on a fine grater.
Combine in a bowl zucchini mass, grated cheese, egg, crushed garlic cloves, finely chopped greens (dill or parsley), a little salt, pepper to taste and mix thoroughly.
Add flour to the mixture and stir again. The mass should be thick and without excess moisture. Otherwise it will not hold together.
Place the mass on a heated frying pan lightly greased with vegetable oil and distribute on the surface. Fry on high heat until the bottom of the pizza is golden.
When the bottom of the pizza is browned, flip the base over to the other side. Sprinkle grated cheese on top, cover and cook over medium heat until tender.
The pizza is ready!
Remove the pizza from the heat and serve in slices. Bon appetit!
