Ingredients

  • fresh pork flesh (pork shoulder is best) 1,5-2 kg (3,3-4,4 lbs);
  • salt 1 tbsp;
  • bay leaf 7-8 pcs;
  • garlic 1 large head;
  • pepper mixture 1 tbsp.

Instructions

  1. Fresh meat should be washed, dried and cleaned of membranes.
  2. Make shallow cross-shaped incisions on the surface of meat in different places, so that a clove of garlic fits into the cut.
  3. Peel the garlic and cut each clove lengthwise.
  4. Stuff the meat with the garlic.
  5. To keep the meat in shape during baking, wrap it with natural thread and tie it tightly around the whole piece.
  6. Rub the meat with salt, a mixture of peppers and a broken bay leaf.
  7. Transfer the meat to a bowl or plastic container, cover and place in the refrigerator for 24-48 hours.

  1. Boil water in a pot and then add salt, pepper, spices and bay leaf to the boiling water.
