Ingredients for Southwest Breakfast Frittata Quesadilla

  • 4 slices turkey bacon or other meat, diced
  • 4-6 large eggs (or a mix of eggs and egg substitute, optional)
  • 1/2 medium bell pepper, diced
  • 1/2 medium onion, diced
  • 1 tablespoon fresh rosemary, minced (about 2 grams)
  • 2 medium tomatoes, chopped
  • 3 medium flour tortillas
  • 2 tablespoons salsa (or more, homemade or store-bought) (about 30 milliliters)
  • 3/4 cup shredded Colby Jack cheese (or cheese of choice) (about 85 grams)
  • 1/4 teaspoon garlic salt (about 1 gram)
  • 1/4 teaspoon black pepper (about 0.5 grams)
  • 1/2 teaspoon salt (about 1 gram)
  • 2 tablespoons light olive oil (about 30 milliliters)
  • 2 tablespoons unsalted butter (about 30 grams)

How to Make Southwest Breakfast Frittata Quesadilla

  1. In a large skillet over medium-high heat, sauté the diced turkey bacon, bell pepper, onion, rosemary, garlic salt, black pepper, and salt in olive oil for about 7 minutes. Cover with a lid for 3 minutes to soften the veggies.
  2. Transfer the cooked mixture to a bowl and stir in salsa.
  3. In the same skillet, reduce heat to medium, add butter, and spread it evenly around the pan.
  4. Place one tortilla at the bottom of the skillet.
  5. Sprinkle a layer of shredded cheese over the tortilla.
  6. Add half of the cooked meat and veggie mixture on top of the cheese.
  7. Sprinkle another layer of cheese, then place a second tortilla on top.
  8. Repeat with another layer of cheese, remaining meat mixture, more cheese, and then top with the last tortilla. The cheese helps keep the quesadilla together.
  9. Spread chopped fresh tomatoes over the top tortilla.
  10. In a bowl, whisk together the eggs and 2 tablespoons of water. Pour the egg mixture over the quesadilla and tomatoes, then cover the pan.
  11. Reduce the heat to low and cook until the eggs are fully set.
  12. Slice into wedges and serve warm with fresh fruit, avocado slices, or extra salsa.
