  • Peaches: Use two cans of sliced peaches in syrup. Drain and mix with cinnamon, cornstarch, and salt for a quick filling.
  • Egg Wash: This is brushed over the edges of the pastry squares before folding and over the tops to ensure a golden brown finish.
  • Glaze: Made with confectioners’ sugar and whole milk, this glaze is drizzled over the turnovers. They taste wonderful even without the glaze!

Can I Use Fresh Peaches?

Absolutely! To use fresh peaches, you’ll need to cook them down to create a peach filling. Here’s how:

  1. Peel, core, and slice 3 medium peaches.
  2. In a medium saucepan over low heat, add the peaches, 1 tablespoon lemon juice, 1/2 cup granulated sugar, 1 teaspoon cinnamon, 1 tablespoon cornstarch, and 1/4 teaspoon kosher salt.
  3. Cook for 10-12 minutes until the peaches start to break down and the mixture thickens.
  4. Let the mixture cool completely before filling each pastry square.
  5. When ready to assemble, add about 2 1/2 tablespoons of filling to each square and proceed with the baking instructions.

Can I Make Peach Turnovers Ahead Of Time?

Yes, you can assemble the turnovers in advance. Cover them with plastic wrap and store them in the refrigerator overnight. The next morning, they’ll be ready to bake! You can also freeze assembled turnovers for up to 2-3 months. Freeze them solid for an hour or two, then transfer to freezer-safe containers. When ready to bake, add a few extra minutes to the baking time without thawing first.

Mini Turnovers

For a cute and tasty twist, make mini turnovers by cutting the puff pastry sheets into smaller squares or rectangles. Add 1-2 spiced peaches in the center, leaving room around the edges. Use egg wash to seal the edges and brush over the tops. Watch them closely while baking, as they may require less time. Cool before drizzling with glaze.

Ingredients

  • 2 sheets puff pastry, thawed according to package instructions
  • 2 cans (15 ounces each) sliced canned peaches, in syrup, drained
  • 2 teaspoons ground cinnamon
  • 2 tablespoons cornstarch
  • ½ teaspoon kosher salt

Egg Wash:

  • 1 large egg, room temperature
  • 1 tablespoon water

Glaze:

  • 1 cup (125 g) confectioners’ sugar
  • 1-2 tablespoons whole milk

Instructions

  1. Preheat the oven: Set to 400°F (200°C). Line two large baking sheets with parchment paper.
  2. Prepare the filling: In a large bowl, mix the drained peaches, cinnamon, cornstarch, and salt.
  3. Roll out the pastry: Roll each pastry sheet into a 12-inch (30 cm) square. Cut each square into 4 smaller squares, totaling 8 puff pastry squares.
  4. Fill the pastries: Place 3-4 peach slices in the middle of each square.
  5. Egg wash: In a small dish, whisk together the egg and water. Brush the egg wash over the edges of the pastry squares, reserving some for the tops.
  6. Fold and seal: Fold each pastry from one corner to the opposite, forming a triangle. Press the edges with a fork to seal.
  7. Brush and bake: Brush the tops with the remaining egg wash. Place four pastries on each baking sheet. Cut three slits in the top of each turnover. Bake for 20-22 minutes until golden brown. Let them cool before glazing.

Glaze:

  1. In a small bowl, whisk together the confectioners’ sugar and one tablespoon of milk. Add more milk as needed to achieve a pourable consistency.
  2. Drizzle the glaze over the cooled turnovers.

Air Fryer Instructions

  1. Assemble the turnovers as instructed.
  2. Place the turnovers in the air fryer basket in a single layer, working in batches if necessary.
  3. Air fry at 350°F (175°C) for 13-15 minutes, until golden brown.
  4. Let them cool before drizzling with glaze.
