This One-Pot Creamy Spicy Sausage Pasta combines seared Andouille sausage, tender pasta, and a rich, creamy sauce spiced just right with red pepper flakes. It’s an all-in-one meal that promises minimal cleanup and maximum flavor, perfect alongside some crisp green beans and warm garlic breadsticks.
Flavorful Ingredients
- Tomatoes: Cherry tomatoes give a burst of freshness; alternatively, you can use diced regular tomatoes.
- Heavy Cream: Provides a rich, creamy texture to the sauce.
- Red Pepper Flakes: Adds a spicy kick, adjustable to your heat preference.
- Pasta: Campanelle pasta holds the sauce beautifully, but feel free to substitute with ziti, rigatoni, or cavatappi, or even try your hand at homemade pasta.
Substitutions
- Broth: While chicken broth is used here, chicken stock or vegetable broth are excellent substitutes depending on what’s available.
- Sausage: If Andouille isn’t your style or available, chorizo or kielbasa are fantastic alternatives that keep the dish hearty and flavorful.
Storing the Dish
Preferably served fresh, any leftovers can be stored in an airtight container in the refrigerator for up to 4 days.
Ingredients
- 1 ring (13 ounces [368g]) Andouille smoked sausage, or kielbasa, sliced diagonally into ¼ inch (0.6 cm) pieces
- 1 tablespoon (15ml) olive oil
- 1 yellow onion, diced (about 1 cup [160g])
- 1 teaspoon (5ml) minced garlic
- 8 ounces (226g) cherry tomatoes, quartered
- 3 cups (720ml) chicken broth
- ½ cup (119ml) heavy cream
- ½ teaspoon (2.5g) kosher salt
- ½ teaspoon (2.5g) black pepper
- ¼ teaspoon (1.25g) crushed red pepper flakes
- 8 ounces (227g) dry campanelle pasta (or your choice of pasta)
- 1 cup (113g) shredded Monterey Jack cheese
- ¼ cup (25g) grated Parmesan cheese
- Parsley, chopped, for garnish (optional)
Preparation Instructions
Cook the Sausage:
- Heat olive oil in a large pot over medium-high heat. Add the sausage slices and cook until browned, about 3-5 minutes per side. Remove and set aside, covered to keep warm.
Sauté the Vegetables:
- In the same pot, add onions and cook until softened, about 5-8 minutes. Add garlic and cook until fragrant, about 1 minute.
Combine Ingredients:
- Add the tomatoes, chicken broth, heavy cream, salt, pepper, red pepper flakes, and pasta to the pot. Stir to combine, ensuring the pasta is submerged.
Simmer:
- Reduce heat to medium, cover, and let simmer for 15-20 minutes, stirring occasionally, until the pasta is al dente.
Finish the Dish:
- Remove the pot from the heat. Stir in both cheeses until melted and combined. Let the pasta rest uncovered for 5-10 minutes to thicken the sauce.
Serve:
- Garnish with chopped parsley if desired and serve hot.
