How to Store Ooey Gooey Butter Cake Bars
To keep your butter cake bars fresh, store them in a covered container in the refrigerator. They will last up to four days. If you want to freeze them, let them cool completely before placing them in a single layer in a freezer-safe container. Label and date the container(s); they will keep in the freezer for up to three months. When ready to enjoy, thaw them in the refrigerator overnight before serving.
Ingredients
For the Crust:
- 2½ cups all-purpose flour (310 grams)
- ¾ cup confectioners’ sugar (90 grams)
- ½ teaspoon kosher salt
- 1 pinch nutmeg
- 12 tablespoons unsalted butter, melted (¾ cup or 170 grams)
For the Topping:
- 8 ounces cream cheese, softened (230 grams)
- 8 tablespoons unsalted butter, at room temperature (½ cup or 115 grams)
- 4 cups confectioners’ sugar (500 grams)
- 2 large eggs, room temperature
- 2 large egg yolks
- 2 tablespoons vanilla extract
Instructions
Prepare the Crust
- Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 9×13-inch (23×33 cm) baking dish with parchment paper.
- Mix Dry Ingredients: In a large bowl, combine the flour, confectioners’ sugar, kosher salt, and nutmeg.
- Add Butter: Drizzle in the melted unsalted butter. Mix until the mixture is combined and crumbly.
- Press into Pan: Using the bottom of a glass or your hand, press the crust mixture firmly into the bottom of the prepared pan.
- Poke Holes: Use a fork to poke holes all over the surface of the crust to prevent bubbling.
- Bake: Bake for 20 minutes. Remove from the oven and let it come to room temperature before adding the topping.
Prepare the Topping
- Cream Butter and Cream Cheese: In the bowl of a stand mixer, combine the cream cheese and butter. Mix on medium speed until creamy.
- Add Remaining Ingredients: Slowly add the confectioners’ sugar, eggs, egg yolks, and vanilla extract. Beat on low until smooth and creamy.
- Pour Over Crust: Pour the topping mixture over the cooled crust.
- Bake: Bake for 35-40 minutes, or until the edges are golden brown. The center should be slightly jiggly but not liquid.
- Cool and Chill: Allow the bars to cool at room temperature for at least 30 minutes. Then, place the bars in the refrigerator to chill for 2 hours before cutting and serving.
