Apart from that, this recipe is a breeze to whip up and can be seamlessly incorporated into any dish calling for pasta. Plus, you have full control over the width and thickness of your noodles.

To prepare the pasta, bring out your stand mixer and combine the sourdough starter, flour, and eggs in the mixer’s bowl. Utilize the dough hook attachment and mix on low until the dough forms into a cohesive ball. Cover the dough with plastic wrap and let it rest for approximately 30 minutes. Alternatively, you can refrigerate the dough overnight if you’re not ready to make noodles immediately.

If you don’t have a stand mixer, fear not; a bit of elbow grease will suffice.

Freezing Noodles for Later Use

To freeze fresh noodles, generously flour them and lay them flat on a cookie sheet. Transfer the sheet to the freezer for about an hour.   4. Slice the dough into noodles of your preferred thickness.
  5. Drop the noodles into boiling water for 3-5 minutes.
