  • 1/2 cup (4 fl oz / 120 ml) olive oil

  • 2 Tbsp (16 g) garlic powder, or 2 cloves minced garlic (about 6 g)

  • 1 Tbsp (5 g) sweet basil

  • 1 large onion, minced (about 8 oz / 225 g)

  • 1/2 tsp (1 g) dried rosemary

  • 1/2 tsp (1 g) dried marjoram

  • 1/2 tsp (1 g) dried oregano leaves

  • 1/2 tsp (1 g) dried thyme

  • 1/2 tsp (1 g) dried parsley

  • 1/2 can of water, using the soup can for measurement (about 5 fl oz / 150 ml)

How to Make Herb-Infused Tomato Roast Beef

  1. Rinse the beef roast under cold water, then pat it dry thoroughly with a paper towel.

  2. Rub the roast generously with olive oil, coating all sides evenly. Place it on a roasting rack.

  3. In a small bowl, combine all the dried herbs, minced onion, and garlic.

  4. Rub the spice mixture over the oiled roast, making sure it’s well coated.

  5. Place the seasoned beef into a slow cooker or a large baking dish.

  6. In the same small bowl, whisk together the tomato soup and water until smooth. Pour half of this sauce over the roast.

  7. Carefully turn the roast with a large fork and knife, then pour the remaining sauce over the other side.

  8. Roast in the oven at 350°F (175°C) until the desired doneness is reached—rare, medium, or well done.
For the slow cooker: cook on high for 3–4 hours or low for 6–8 hours.
For an extra-large slow cooker, you can cook two roasts at once at 450°F (230°C) for 2 hours.

  9. Slice the roast and spoon some of the flavorful tomato sauce over the meat before serving.
