Heavenly Homemade Peanut Butter Cups

Ingredients

  • ½ cup (129 g) creamy peanut butter
  • 3 tablespoons unsalted butter, at room temperature
  • ¼ cup (31 g) confectioners’ sugar
  • 2 cups (364 g) milk chocolate chips

Instructions

  1. Line a standard 12-cup muffin tin with liners. Set aside.
  2. In a medium bowl, combine peanut butter, butter, and confectioners’ sugar using a hand mixer on low. Set aside.
  3. Place chocolate in a microwave-safe bowl. Heat in 20-second increments, stirring after every 20 seconds, until melted and creamy (approximately 1-2 minutes total).
  4. Add about 1 tablespoon of melted chocolate to the bottom of each muffin tin, fully coating the liner’s bottom. Top with 2 heaping teaspoons of the peanut butter mixture in the center. Finish with about 1 tablespoon of chocolate on top of each cup. Gently tap the muffin tin onto the counter to settle and smooth out the chocolate.
  5. Chill in the refrigerator for 1 hour or until set before serving.
