Ingredients For Grandma’s Homemade Crunchie Bars

  • Butter, as needed for silicone mold
  • 3/4 cup (150 grams) granulated sugar
  • 2 tablespoons (30 ml) light corn syrup
  • 2 tablespoons (40 grams) honey
  • 1 tablespoon (15 ml) water
  • 1 teaspoon (5 ml) pure vanilla extract
  • 1 tablespoon (15 grams) baking soda
  • 2/3 cup (160 grams) milk or semi-sweet chocolate, melted

How To Make Grandma’s Homemade Crunchie Bars

  1. Prepare the Mold: Lightly grease a silicone mold with butter and set it aside for later use.
  2. Combine Sugar, Corn Syrup, and Honey: In a large pot, combine the granulated sugar, light corn syrup, and honey. Turn the heat to medium-low and cook, stirring constantly, until the sugar begins to dissolve. Once the mixture becomes very sticky, add the water and continue stirring until the mixture is smooth.
  3. Boil the Mixture: Increase the heat to bring the mixture to a boil. Reduce the heat to medium and let it simmer, stirring frequently. Cook until the temperature reaches between 275°F to 300°F (135°C to 150°C) using a candy thermometer. Remove the pot from the heat and immediately add the vanilla extract and baking soda, stirring quickly. The mixture will foam up as you stir.
  4. Transfer to Mold: Quickly pour the foamy mixture into the prepared silicone mold. Do not level the surface, as this can cause air bubbles to form. Allow the mixture to sit and harden for about 6 to 7 hours at room temperature.
  5. Coat with Chocolate: Once the bars have hardened, remove them from the mold. Dip each bar into the melted milk or semi-sweet chocolate, ensuring they are fully coated. Place the coated bars on a wire rack set over a baking sheet lined with wax paper. Transfer the baking sheet to the refrigerator and chill until the chocolate has set, approximately 1 hour.
