Ingredients

  • 5 tablespoons unsalted butter
  • ¾ cup (190 g) creamy peanut butter, divided
  • 1 bag (16 ounces / 450 g) mini marshmallows (about 8 cups)
  • 6 cups (170 g) Rice Krispies Cereal
  • ½ cup marshmallow fluff

Instructions

  1. Prepare the Pan: Spray a 9×9-inch (23×23 cm) baking dish with nonstick cooking spray and set aside.
  2. Melt the Butter and Peanut Butter: In a large pot over medium heat, melt the butter and ¼ cup (64.5 g) of the peanut butter. Stir until the mixture is smooth.
  3. Melt the Marshmallows: Add the mini marshmallows to the pot, stirring frequently until fully melted. Once melted, remove the pot from heat.
  4. Mix in the Cereal: Spray a rubber spatula with nonstick spray to prevent sticking. Using the spatula, fold in the Rice Krispies cereal, stirring until well-coated.
  5. Add Peanut Butter and Marshmallow Fluff: In a microwave-safe bowl, heat ¼ cup (64.5 g) of peanut butter for 15-20 seconds until smooth and pourable. Gently fold the melted peanut butter and marshmallow fluff into the cereal mixture, being careful not to overmix.
  6. Transfer to Pan: Transfer the mixture to the prepared baking dish, pressing it into an even layer using the spatula.
  7. Drizzle with Peanut Butter: Heat the remaining ¼ cup (64.5 g) of peanut butter in the microwave for 15-20 seconds, then drizzle it over the top of the bars.
  8. Cool and Serve: Allow the bars to cool to room temperature before cutting into squares and serving.
