Ingredients for Breakfast Taquitos

  • Breakfast Sausage: Use ground breakfast pork sausage from your local grocery store or make your own.
  • Cheese: I used Monterey Jack cheese for this recipe, but feel free to use your favorite type of cheese.
  • Salsa: Choose your preferred salsa, ranging from mild to hot, based on your taste. If you buy a jar of salsa, you will have plenty to use for both filling and dipping.
  • Wonton Wrappers: You can use either round or square wonton wrappers, or even make homemade wonton wrappers if you prefer.

How to Make Breakfast Taquitos

Taquitos are small, rolled-up tacos that are typically deep-fried. To make these breakfast taquitos healthier while keeping them crispy, we will use an air fryer. Here’s how to make them:

  1. Prepare the Filling: Start by browning the breakfast sausage in a skillet over medium-high heat. Once browned, add the whisked eggs to the same skillet and cook until done (about 3-5 minutes). Stir in the shredded cheese and salsa.
  2. Assemble the Taquitos: Use a tablespoon of the sausage and egg mixture to fill each wonton wrapper. Roll up each wrapper, leaving the ends open.
  3. Cook in Air Fryer: Place the rolled taquitos in a single layer in the air fryer basket and brush the tops with olive oil. Air fry at 370°F (190°C) for 5 minutes. Flip the taquitos and air fry for another 5 minutes.
  4. Serve: Remove the taquitos from the air fryer and serve with sour cream and salsa for dipping, or enjoy them plain.

Can I Make Breakfast Taquitos Ahead of Time?

Yes! You can prepare the sausage and egg mixture, fill and roll the wonton wrappers, and store them in a covered container in the refrigerator overnight. In the morning, cook them in the air fryer as instructed.

Can I Bake These in the Oven?

Absolutely! If you don’t have an air fryer, you can bake the taquitos. Follow the same instructions up to cooking them in the air fryer. Instead, place them on a parchment-lined baking sheet, brush with olive oil, and bake at 400°F (200°C) for 10 minutes. Flip them over and bake for another 10 minutes.
