I love vinaigrette because it combines so many different flavors and yet they are all very appropriate. Sweet beets, salty cucumbers, bland potatoes, onion bitterness and exquisite sourness of cabbage – it would seem, how can it be combined? But it turns out very possible. Cabbage and cucumbers are crunchy, peas and potatoes give you softness – just perfect.
I believe that vinaigrette can be made for a holiday and for everyday use, because it has no mayonnaise and harmful ingredients. On the contrary – it is a healthy, fresh salad, which you can eat up. By the way, I always make vinaigrette with sauerkraut – try it, it’s very delicious!
Ingredients (8 servings)
- Sour cucumbers 200 г
- Sauerkraut 200 г
- Green peas 200 г
- Carrots 200 г
- White onions 100 г
- Potatoes 200 г
- Beets 200 г
- vegetable oil to taste
- Ground black pepper to taste
- Salt to taste
Instructions
Boil carrots, potatoes and beets.
Dice the potatoes.
Dice carrots.
Transfer the potatoes and carrots to a salad bowl.
Slice the cucumbers.
Place the cucumbers in a salad bowl.
Peel and chop the beets.
Chop the onions finely. If the onions are bitter, you can rinse them with boiling water.
Beets and onions transfer to a salad bowl.
Add the sauerkraut.
Place the canned peas. Season with salt and pepper, add oil and stir.
