Babaganush is a dish that came to us from the Middle East. It is prepared from ripe eggplants baked in the oven, or even better on coals. Various spices, olive oil, herbs and, of course, sesame paste are added to the eggplants. Babaganoush can be served as a cold appetizer or spread on bread, both are very tasty.
Ingredients (1 serving)
- Eggplants 3 pcs.
- Ground or Fresh Red Hot Pepper 1 pinch
- Salt 0.5 tsp.
- Sesame paste 85 г
- Lemon juice 2 tbsp.
- Fresh cilantro 0.5 bunch
- Garlic 2 cloves.
- Olive oil 4 tbsp.
Instructions
Wash the eggplants and place them on a baking tray. Put the tray in the oven and bake at 200 degrees for about 45 minutes.
The cooking time depends on the size of the eggplant. The easiest way to check if the eggplants are ready is to pierce them with a fork.
While still warm, put the eggplants in a bag and cover them with a towel. This way it will be easier to remove the skin from them.
Take the eggplants out of the bag and remove the skin with a fork.
Transfer the pulp to a blender.
Add cilantro, oil, garlic, lemon juice, salt and pepper. Grind.
At the end add sesame paste and stir.
Babaganoush is ready.
