How to Make Jerk Chicken

Jerk Chicken Marinade:

  • 1 yellow onion, roughly chopped
  • 2 medium habanero peppers or Scotch bonnet peppers, seeded and chopped
  • 3 medium scallions, roughly chopped
  • 6 cloves garlic
  • 3 tablespoons olive oil, divided
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 2 tablespoons brown sugar, packed
  • 1 teaspoon ground ginger
  • 1 teaspoon dried thyme
  • ½ teaspoon kosher salt
  • ½ teaspoon cinnamon
  • ½ teaspoon allspice
  • ¼ teaspoon nutmeg
  • ¼ teaspoon black pepper

Chicken:

  • 3 pounds bone-in chicken thighs and legs, about 8-10 pieces (1.36 kg)
  • Parsley, for garnish
