If you like savory pies, you’ll love this wonderful French pie with a thin pastry and a hearty filling – quiche lorraine. For all its virtues, it is quite simple to make. Quiche Lorraine is a wonderful idea for lunch, dinner or breakfast, a great snack for a big company and an excellent food for a trip to the countryside. It is equally delicious with white wine, tea or coffee.
Ingredients (8 servings)
- Champignons 300 g
- Chicken eggs 2 pcs.
- Vegetable oil for frying
- Cream 200 ml
- Grated nutmeg 1 pinch
- Salt to taste
- Ice water 3 tbsp.
- 1 chicken egg
- Chicken filet 350g
- Hard cheese 150 g
- Butter 150g
- Flour 250g
Instructions
Sift the flour into a bowl. Add the chilled diced butter, a pinch of salt and the egg and knead everything into a crumb. Add the ice water and knead into a stiff dough. Roll the dough into a ball, wrap in clingfilm and leave in the refrigerator for 30 minutes.
Cut the chicken fillets and mushrooms into small cubes.
Heat vegetable oil in a frying pan, add the chicken fillet and fry until browned. Add the mushrooms to the pan, pour a little water and simmer all together until the liquid evaporates.
Place the dough in a mold and form sides. Pierce the dough with a fork in several places and send it to the oven heated to 200 degrees for 10-12 minutes.
Beat the eggs with a fork, add the cream, a pinch of salt and a pinch of nutmeg. Grate the cheese.
Take the mold with the base out of the oven and place the filling.
Fill the base with the creamy filling and sprinkle with cheese. Bake the quiche lorraine for 35 minutes at 180 degrees until golden. The pie filling should thicken.
Serve quiche lorraine slightly warm or chilled. Bon appetit!
