  • 1 cup marshmallow fluff (or marshmallow creme)

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and line two large baking sheets with parchment paper.
  2. Cream the Ingredients: In a large mixing bowl, combine the peanut butter, softened butter, and brown sugar. Using a hand mixer, beat the mixture on medium speed until smooth and creamy, about 2-3 minutes.
  3. Add Egg and Vanilla: Scrape down the sides of the bowl and add the egg and vanilla extract. Mix for about 30 seconds until fully combined.
  4. Add Dry Ingredients: Add the flour, cornstarch, and salt to the wet ingredients. Mix on low speed until just combined, about 30 seconds to 1 minute.
  5. Shape the Dough: Using a 2-tablespoon cookie scoop, drop balls of dough onto the lined baking sheets. Flatten each dough ball into a disk about 3 inches (7.6 cm) across.
  6. Add the Marshmallow Filling: Using two spoons (to prevent sticking), place about 1 tablespoon of marshmallow fluff into the center of each dough disk. Alternatively, pipe the marshmallow fluff onto the cookies using a piping bag.
