  • 1 tsp olive oil, for sautéing
  • 3 cloves of garlic, minced
  • 1 onion, chopped
  • 1 zucchini, diced
  • 2 cans (15 oz. each) of beans, drained and rinsed (your choice of beans)
  • 1 can (14.5 oz.) of diced tomatoes
  • 1 can (15 oz.) of tomato sauce
  • 1/4 cup water
  • 1 tsp chili powder
  • 2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp cayenne
  • 2 tsp paprika
  • 1/4 tsp oregano
  • 1/2 tsp crushed red pepper
  • Salt and pepper to taste
  • Sriracha sauce
  • Avocado, for topping


In a large pot, heat the olive oil over medium-high heat and sauté the onion and garlic for about 3 minutes.

Add the diced zucchini and sauté for an additional 3-4 minutes or until it becomes tender.

Incorporate the beans, diced tomatoes, tomato sauce, water, and spices into the pot. Bring the mixture to a boil, then reduce the heat to simmer for 10 minutes.

Adjust the spiciness of the chili by mixing in some sriracha sauce, adding as much as you prefer.

Serve the chili in bowls and top with slices of avocado for an extra burst of flavor.
