What is Monkey Bread?

Monkey Bread is a fun and sticky pull-apart bread that’s been known by many names, including monkey puzzle bread, sticky bread, and Hungarian coffee cake. No matter what you call it, the joy comes in pulling off a piece of the warm, gooey bread covered in a delicious caramel glaze. The secret to this easy version? Butterscotch pudding mix!

Ingredients for 5-Ingredient Monkey Bread

Rolls: You can skip making homemade dough for this recipe and use a package of Rhodes frozen dinner rolls. There’s no need to thaw them ahead of time—just use them straight from the freezer.

Butterscotch Pudding Mix: Be sure to grab the COOK & SERVE variety, not the instant mix. This ingredient is crucial for achieving that gooey, caramel-like consistency.

Nuts: Adding nuts is optional, but walnuts or pecans can add a delightful crunch to your monkey bread.

Do the Rolls Need to Sit Out Overnight?

For best results, allow the rolls to rest for 8-10 hours. If you’re short on time, you can place the frozen rolls in a warm spot, which will help them rise in about 4 hours. However, be careful not to let them sit out for more than 12 hours, as they may over-expand and deflate.

Can I Use a Different Pan?

While Monkey Bread is traditionally made in a bundt pan, you can use other types of pans as well. A casserole dish, bread pan, or even a springform pan will work, although the cooking times may vary. Just make sure to check that the bread is fully cooked in the center before serving.

Easy 5-Ingredient Monkey Bread

Ingredients

  • 20 Rhodes frozen dinner rolls
  • 1 package (3.5 ounces) COOK & SERVE butterscotch dry pudding mix
  • ¾ cup (150 g) light brown sugar, packed
  • ½ cup (1 stick or 115 g) unsalted butter, melted
  • 1 teaspoon ground cinnamon
  • Chopped nuts (optional)

Instructions

  1. Prepare the Pan: Spray a 10-inch (25 cm) bundt pan with nonstick cooking spray. If you’re using nuts, sprinkle them evenly in the bottom of the pan.
  2. Assemble the Bread: Place twenty frozen rolls in the prepared bundt pan. Evenly sprinkle the dry butterscotch pudding mix over the rolls.
  3. Add the Topping: In a medium bowl, mix together the brown sugar, melted butter, and cinnamon. Pour this mixture evenly over the rolls.
  4. Rest Time: Leave the pan uncovered on the counter overnight (or for at least 8-10 hours). If you prefer, you can loosely cover the pan with plastic wrap that has been sprayed with nonstick cooking spray.
  5. Bake the Bread: When ready to bake, preheat your oven to 350°F (175°C). Bake the monkey bread for 25-30 minutes. If the top starts to brown too quickly, loosely cover it with aluminum foil.
  6. Serve: Once baked, immediately invert the monkey bread onto a large serving plate. Serve warm and enjoy the gooey goodness!
