  • 1 cup sour cream, room temperature (about 240 milliliters)
  • 1 1/2 teaspoons vanilla extract (about 7 milliliters)
  • 5 extra-large eggs

For the Vanilla Crust*

  • 1 stick butter, softened (about 113 grams)
  • 1/4 cup sugar (about 50 grams)
  • 1 large egg yolk
  • 1 teaspoon vanilla extract (about 5 milliliters)
  • 3/4 cup all-purpose flour (about 95 grams)
  • A pinch of salt

You may also substitute with an Oreo cookie crust for a chocolatey contrast.

For the Raspberry Grand Marnier Sauce:

  • 2 jars seedless raspberry jam (about 32 ounces / 900 grams)
  • 7 tablespoons Grand Marnier liqueur (about 100 milliliters)
  • 5-6 cups fresh raspberries (about 600-720 grams)

How to Make Raspberry Grand Marnier Cheesecake

This raspberry sauce recipe makes a large batch. If you prefer, you can halve the sauce recipe and still have plenty to drizzle over each slice.

Step 1: Prepare the Crust

  1. In a mixing bowl, beat butter and sugar together until light and fluffy.
  2. Add the egg yolk and vanilla extract, then mix well.
  3. Slowly mix in the flour and salt until a dough forms.
  4. Shape the dough into a ball, wrap in plastic wrap, and refrigerate for 30 minutes.
  5. Press the chilled dough into the bottom of a lightly greased 9 3/4 to 10-inch (25-26 cm) springform pan. Lightly flour your hands to prevent sticking.
  6. Bake the crust at 350°F (175°C) for 15-20 minutes, or until slightly golden. Let cool completely.

Step 2: Make the Cheesecake Filling

  1. Beat the cream cheese until light and fluffy, scraping down the bowl as needed.
  2. Gradually add the sugar and flour, mixing until smooth.
  3. Add the sour cream and vanilla extract, beating until well combined.
  4. Add the eggs, one at a time, mixing just until incorporated. Do not overbeat.

Step 3: Bake the Cheesecake

  1. Pour the cheesecake filling into the prepared crust. Wrap the bottom of the springform pan with two layers of aluminum foil to prevent leaks.
  2. Place the cheesecake into a water bath by setting the pan in a larger baking dish filled with about 1 inch (2.5 cm) of hot water.
  3. Bake at 350°F (175°C) for 45 minutes. Then, reduce the oven temperature to 325°F (160°C) and bake for another 30-45 minutes, or until the center is just set.
