The original dessert was made with caramel, boiled sweetened condensed milk, and bananas in a flaky pie crust. Over time, variations of this dessert have emerged, including this version that uses a shortbread crust for added richness. With layers of bananas, toffee, and whipped cream, it’s one of the easiest and most irresistible desserts you can make!
Ingredients & Substitutions
Crust: When preparing the shortbread crust, ensure that all the crumbs are well-coated with melted butter. This helps the crust hold together. You might also want to reserve a few crumbs to sprinkle over the top for added texture. If preferred, you can use a graham cracker crust as an alternative.
Toffee Sauce: The toffee filling is made by combining sweetened condensed milk, unsalted butter, and brown sugar. Although you can use dulce de leche, this recipe achieves the best results with homemade toffee sauce for the perfect set and flavor.
Bananas: Slice three medium bananas into rounds to layer in the pie.
Whipped Cream: Homemade whipped cream is ideal for this recipe, but store-bought whipped topping can be used if you’re short on time.
Can I Make Banoffee Pie Without a Springform Pan?
Absolutely! If you don’t have a springform pan, you can use an 8 or 9-inch (20-23 cm) square baking dish. For a unique presentation, you can also assemble the pie in small ramekins or dessert cups to create individual servings of Banoffee Pie. However you choose to serve it, this dessert is sure to be a hit!
How to Store Banoffee Pie
Store your Banoffee Pie in the refrigerator, covered. It will stay fresh for up to 3-4 days. However, I do not recommend freezing this pie as it may affect the texture of the bananas and the toffee filling.
Ingredients
Bananas:
- 3 medium bananas, sliced into rounds, divided
Shortbread Crust:
- 2 cups shortbread crumbs
- 6 tablespoons salted butter, melted
Toffee Filling:
- ¼ cup (½ stick or 60 g) unsalted butter
- ¼ cup brown sugar, packed
- 1 can (14 ounces or 400 g) sweetened condensed milk
Whipped Cream:
- 1 cup (240 g) heavy whipping cream
- 2 tablespoons confectioners’ sugar
Instructions
Prepare the Pan:
- Spray an 8-inch (20 cm) springform pan with nonstick cooking spray and line the bottom with parchment paper.
Shortbread Crust:
- In a bowl, mix together the shortbread crumbs and melted butter until the crumbs are fully coated.
- Press the mixture into the bottom and halfway up the sides of the prepared springform pan. Set aside.
Toffee Filling:
- In a medium saucepan over low heat, melt the butter and brown sugar, stirring until the sugar has fully dissolved.
- Add the sweetened condensed milk and increase the heat to medium-low. Bring the mixture to a low simmer, stirring constantly for 16-18 minutes, until it thickens and turns a golden caramel color.
- Remove from heat and allow the toffee sauce to cool slightly while you prepare the whipped cream.
Whipped Cream:
- In a stand mixer fitted with the whisk attachment, whip the heavy cream on medium speed until it begins to thicken (about 1½ minutes).
- Gradually add the confectioners’ sugar and continue whipping until stiff peaks form.
Assembly:
- Arrange half of the banana slices over the shortbread crust.
- Pour the warm toffee sauce over the bananas, spreading it evenly.
- Layer the remaining banana slices over the toffee.
- Top with whipped cream, spreading it evenly over the bananas.
- Transfer the pie to the refrigerator to chill for at least 1 hour, or overnight if possible.
Serve:
- Serve the pie chilled, optionally garnished with extra shortbread crumbs for added texture.
