It was a revelation to me that it was possible to bake bread with 100% semolina. Went for the experiment. Successful! The dough rises well almost twice. And the filling of summer vegetables gives a unique flavor that spills into your kitchen while the bread is still in the oven.
Very pretty, bright and colorful bread with a very interesting texture and flavor! So don’t be afraid to use semolina as flour!
INGREDIENTS
- 1 small carrot
- 1 red bell bell pepper
- Small shallot (or scallion)
- 7 grams of dry yeast
- 200 gr. semolina
- 2 eggs + 2 yolks
- 50 gr. hard cheese
- 4 sun-dried tomato halves
- 0.5 tbsp. seedless black olives
- 100 g. butter
- 1 tsp. thyme and savory
- Handful of pumpkin seeds (or sunflower seeds)
- salt
- 2 tbsp. olive oil
Instructions
Cut all the vegetables into small cubes.
Cut the white leeks into rings and fry in olive oil until golden.
Add the rest of the vegetables and sauté until soft. Sprinkle with the herbs and leave to cool.
Mix lightly olive oil and butter (softened), add eggs and yolks. Season with salt. Stir in the semolina, add the yeast. Knead the dough. I do everything with a mixer with hook attachment.
Add roasted vegetables, chopped olives and cheese. Stir to combine. Let stand for 1 hour.
Put the dough into a cake pan greased with butter and bake in a preheated oven at 180°C for 40 minutes.

Prepare the products. Eggs, butter must be at room temperature

Cut the white part of the leek into rings and fry in olive oil until golden.

Cut the cheese into small cubes.
Lightly beat olive oil (2 tablespoons) and butter (softened)
Add the eggs and yolks. Season with salt. Pour in the semolina, add the yeast.
Knead the dough. I do everything with a mixer with a hook attachment.
Add roasted vegetables, chopped olives, cheese, sun-dried tomatoes, and pumpkin seeds. Stir.
Allow to infuse for 1 hour.
Place the dough in a mold greased with butter and bake in a preheated 180C oven for 40 minutes.
