- 1,8-pound spiral-sliced ham
- 1 cup chicken stock
- 1/2 cup brown sugar
- 1/4 cup honey
- 2 tablespoons Dijon mustard
- 1 tablespoon Worcestershire sauce

- 1/2 teaspoon ground ginger
- 2 tablespoons of sweet rub (optional)
Instructions:
Prepare your smoker or outdoor grill for smoking at low heat (around 225°F).
Place the ham directly on the smoker grates, exposed to the smoke, and smoke for about 2-3 hours, or until the internal temperature reaches 120°F.
Remove the ham from the smoker and place it in a large cast iron pan or disposable aluminum baking pan. Pour the chicken stock into the pan, cover tightly with aluminum foil, and return to the smoker. Continue to smoke the ham for another 2-3 hours, or until the internal temperature reaches 140°F.
