- 680 g (1 ½ pounds) boneless, skinless chicken thighs
- 10 g (2 teaspoons) ground coriander
- 10 g (2 teaspoons) cumin
- 1 can (198 g) chipotle peppers in adobo sauce
- 4 cloves garlic, minced
- 10 g (2 teaspoons) kosher salt
- 60 ml (4 tablespoons) olive oil
Instructions
- In a medium bowl, combine ground coriander, cumin, chipotle peppers in adobo, minced garlic, kosher salt, and olive oil.
- Place the chicken thighs in a zippered plastic bag and pour the chipotle mixture over them.
- Seal the bag, removing any excess air, and marinate in the refrigerator for 1 hour.
- Heat a large skillet over medium-high heat. Cook the chicken thighs for 3-5 minutes on each side, until slightly charred.
- Reduce heat to medium-low and continue cooking for 10-15 minutes, or until the internal temperature reaches 74°C (165°F).
