Simply mix all the ingredients together, pour the batter into a pie plate, and bake. As it bakes, a delicate crust forms on its own, resulting in a creamy, custard-like pumpkin pie that’s delicious on its own or topped with homemade whipped cream.

Keep in mind that using a larger pie plate will result in a thinner pie, and you may need to adjust the baking time—start checking for doneness around 45 minutes.

How to Store and Freeze Effortless Pumpkin Pie

Your crustless pumpkin pie should be refrigerated. When stored in an airtight container or wrapped well, it will stay fresh for 3-4 days.

To freeze:

  1. Allow your pie to cool completely.

  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a deep 8-inch (20 cm) pie plate by spraying it with cooking spray.
  2. In a large mixing bowl, combine the granulated sugar, baking mix, softened butter, evaporated milk, eggs, pumpkin puree, pumpkin pie spice, and vanilla extract.
  3. Using a hand mixer, blend the ingredients until the mixture is smooth and well combined (about 2 minutes).
