How to Make Refrigerator Pickles
Before you start, consider the number of cucumbers you have and ensure you have canning jars and lids ready. Although these pickles don’t require traditional canning, the jars still need to be sterilized and properly sealed.
Most of the effort in this recipe is in the preparation. While your jars are being sterilized (either in a dishwasher or a pot of boiling water), you can slice the cucumbers, green peppers, and onions. Ensure you have enough vinegar and celery seed on hand. Once everything is prepped, the assembly is quick and straightforward!
Variations for Refrigerator Pickles
This recipe does not include dill. If you prefer dill pickles, add up to 6 sprigs of fresh dill or 1 teaspoon of dill seeds to each jar. You can also add a couple of garlic cloves (unpeeled).
For a different texture, try cutting the cucumbers into spears instead of slices. Ensure the cucumbers are very firm. Wash them and slice in half crosswise, then cut each piece in half lengthwise into spears. Check the length of the first spear against your jar to ensure it fits. Baby cucumbers work well for this method too!

- 3 medium cucumbers, sliced about ¼-inch thick
- 1 green pepper, sliced into short strips
- 1 onion, sliced into rings
- 2 cups cider vinegar (475 ml)
- 2 cups granulated sugar (400 grams)
- 2 teaspoons celery seed
- 4 tablespoons kosher salt (60 grams)
Instructions
Sterilize Jars:
Clean and sanitize 6 pint-size mason jars with lids.
Prepare Vegetables:
Divide the sliced cucumbers, green pepper, and onion among the jars.
Make Pickling Liquid:
In a bowl, mix together the cider vinegar, granulated sugar, celery seed, and kosher salt.
Fill Jars:
Fill each jar halfway with the pickling liquid. Top off each jar with cold water.
Seal and Shake:
Fit the lids tightly on the jars and shake to mix the contents.
Refrigerate:
Store the jars in the refrigerator for at least 24 hours before enjoying.
