Who doesn’t like tomatoes? And I say that it’s probably rare to meet such a person, though if only for health reasons.
In our family, tomatoes are sold with gusto, especially a great lover of my husband, without them will not eat. Therefore, every year we plant more than 100 bushes of tomatoes on our garden plot. Today I want to share a simple and quick recipe that I use to make tomato snacks, they are very tasty, a real delicacy, and they really never get bored. I can make them every day, they definitely do not stay on the table…
Magical appetizer of tomatoes and onions in a mysterious marinade.
A very tasty, savory snack, moderately sweet, moderately salty, moderately spicy, and the longer it stands, the tastier it gets. It is made quickly from available products, which are always available to every housewife.
Ingredients:
- Tomatoes – 5-6 pcs
- Onions – 2-3 medium sized pieces
- Vegetable oil – 4-5 tablespoons
- Garlic – 3-4 cloves
- Lemon juice – 2-3 tablespoons
- Honey – 1,5-2 tbsp.
- Hot red pepper – 1/4 tsp.
- Basil – 1/2 tsp.
- Salt – to taste
Instructions:
- Tomatoes and onions cut into rings, it does not matter, you can cut them to your taste, the main thing is large pieces, then finely chop the garlic.
Let’s make a marinade:
- Mix honey, lemon juice, vegetable oil (can be olive oil), salt and spices in a bowl.
- Now, in a suitable bowl or pan lay out the tomatoes in layers, then the onions, sprinkle garlic on top, then tomatoes and onions with garlic again, pour the prepared dressing on top, it gives a special zest, shake well and let stand in the fridge for about 30 minutes.
I always make such a snack in the evening and in the morning I give it to my beloved husband, he is ready to carry me in his arms…
Snack “Minute Cooking”
This is a very tasty appetizer, it’s impossible to resist trying it right after making it, but like all appetizers, the longer it stands, the tastier it gets, I always make a double batch
Ingredients:
- Tomatoes – 1 kg
- Vegetable oil – 4-5 tbsp.
- Garlic – 3 – 4 cloves
- Sweet pepper – 1 large
- Fresh dill – 1 bunch
- Black pepper – 1/4 tsp. (to taste)
- Sweet paprika – 1/2 tsp.
- Sugar – 2 tsp.
- Salt – to taste
Instructions:
- Wash and dry the vegetables well.
Make marinade:
- Chop bell peppers and garlic with a blender until smooth, add vegetable oil, salt, sugar, sweet paprika, black pepper, mix the mixture well.
- Cut the tomatoes into slices, about 4 parts, if the tomatoes are very large, then into 8 parts.
- Now we put the slices in a suitable size container, preferably with a lid, and pour the prepared marinade, sprinkle the top with finely chopped dill greens (you can add parsley greens, if desired), and mix everything well.
- Place in the refrigerator for a couple of hours to infuse, or better overnight, so that the vegetables soak up the spices. Then you can serve it to the table, it will be delicious with young potatoes…
Snack tomatoes in a bag “A moment of patience”
My husband loves these tomatoes the most, he’s willing to eat them all year round and every day. They turn out delicious, flavorful, impossible to tear away. If I cook them for a group of guests, then everyone will thank me without exception. The recipe is really simple.
Ingredients:
- Tomatoes – 1 kg
- Garlic – 7 to 10 cloves
- Fresh dill – 1 bunch
- Black pepper – (to taste)
- Ajika (Spicy Sauce) – 1 tsp.
- Sugar – 1 tsp.
- Salt – 1 tablespoon (without the hill)
Instructions:
- Tomatoes are well washed, remove the stalk, make a cross-shaped incision on each tomato, about halfway (in order to quickly soak up the spices and seasonings). Chop the garlic and dill finely.
- Now you will need a bag, I use a bag for freezing, but you can take any plastic bag, but it is better to put 2 or 3 bags in one, so it will be stronger and will not tear.
- Send in the bag prepared tomatoes, add dill, garlic, pepper, salt and adjika (you can use dry, I buy ready adjika in jars), close the bag or tie it well, shake the contents to spices and herbs evenly distributed.
- Leave at room temperature for at least 5-6 hours, or better overnight, in the morning put it in the fridge, the longer it will stand, the tastier it will be.
