Sirloin steak: Sirloin is my preferred choice for steak bites, but other excellent options are listed below.

Kosher salt: I use kosher salt in almost all my recipes for its texture and flavor.

Cracked pepper: Freshly cracked black pepper enhances the taste of the steak.

Unsalted butter: Unsalted butter is ideal since you’ll be seasoning with salt. If using salted butter, adjust the added salt accordingly.

How to Make Steak Bites

Enjoy perfectly cooked steak year-round with no grill required! All you need is a skillet, butter, salt, and pepper. A cast-iron skillet is highly recommended for this recipe due to its heat retention and even cooking.

  1. Prepare the Steak: Cut the sirloin into 1-inch (2.5 cm) cubes and season with salt and pepper.
  2. Heat the Skillet: Set the skillet on high heat and add butter. Once the butter melts, add the steak cubes. The steak should sizzle immediately; if not, the pan isn’t hot enough.
  3. Cook the Steak: Sear the steak bites for 1-2 minutes on each side. For precise cooking, use a meat thermometer to achieve the desired doneness:
  • 125°F (52°C) = Rare
  • 130-135°F (54-57°C) = Medium Rare
  • 140°F (60°C) = Medium
  • 145°F (63°C) = Medium-well

Choosing the Best Meat for Steak Bites

Top sirloin steak is ideal for steak bites, but other tender cuts from the rib or loin sections are also excellent choices:

For a different cooking method, use an air fryer:

  1. Drizzle the cubed steak with olive oil and season with salt and pepper.

  3. Toss the cooked steak bites in 1/4 cup (60 ml) of melted butter and serve warm.

Instructions

  1. Season the steak cubes with salt and pepper, tossing to coat evenly.
  2. In a large skillet over high heat, melt the butter. A 12-inch (30 cm) cast-iron skillet works well for one steak’s worth of bites. If cooking in batches, use half the butter (¼ cup or 60 ml) for each batch.
  3. Place the steak cubes in the skillet in a single layer. If your pan isn’t large enough, cook in batches. The butter should sizzle when the steak is added, indicating the pan is hot enough to sear.
  4. Cook for 1-2 minutes on one side, then flip and cook for another 1-2 minutes on the other side. The meat should be brown and crispy on the outside and pink inside. Cook longer if you prefer well-done steak bites.
