You can make apple pancakes all year round. I use this recipe when I want to have a tea party with my family or the goal is to feed my son apples. He is not really fond of fresh apples. But pancakes with apples he never turns down!
The recipe I want to share with you in this post is a recipe I have tried for years. It is simple, but the pancakes will be delicious. It is based on kefir. The percentage of fatness does not play a role. By adding a baking powder to the dough, the pancakes turn out lush and tender. According to the recipe, eggs are not used at all.

Ingredients:
- kefir 300 ml;
- baking powder 1 tsp;
- sugar 1 tbsp;
- pinch of salt;
- flour 1,5 cup;
- apple 1 piece.
Recipe for pancakes with apple:
Mix together kefir and a packet of baking powder.
I recommend using kefir around room temperature.
Salt the mixture and add sugar.
Stir the dry ingredients in the kefir with a whisk.
In the dough you need to add flour and mix well.
The consistency should turn out like sour cream – moderately thick. If necessary, add a little more kefir.
It is not necessary to cut the peel off the apples – chop them into cubes, the size so that it was convenient to knead the dough and, of course, eat the pancakes.
Add apples to the batter and mix it with a spoon.
Fry the pancakes in a heated frying pan with vegetable oil.
It is convenient to pour the batter with a spoon. It will not drip, and the pancakes will take the desired shape. The size is up to you.
Cook the pancakes on both sides for about 3 minutes. Fry them over medium heat. They should be golden on both sides.
The dough absorbs quite a lot of vegetable oil, so if necessary, you can safely add it to the pan.
